   CREAM CHEESE SLICE

250g cream cheese
200g butter
1 cup castor sugar
4tsp lemon juice
2tsp vanilla essence
2tsp gelatine
1/2 cup hot water
2 packets lattice biscuits

METHOD:

soften cream cheese and butter.  beat until smooth.   add lemon juice,
vanilla and sugar.  beat until smooth.
dissolve gelatine in the hot water.  add to cream cheese mixture.
beat again until smooth and creamy.

place tin foil into a baking dish.  place one packet of the lattice
biscuits on foil.  pour mixture over biscuits.  place the other packet of
biscuits over the top of the mixture.

chill in fridge.
