CHOCOLATE MUFFINS/BROWNIES = High Carbo / Low fat 3/4 cup flour 1/2 tsp baking powder 1/2 cup cocoa powder 1 cup castor sugar 1/2 cup low fat vanilla yogurt 2 eggs 1 tsp vanilla essence 1 1/2 tablspns veg oil 1. Sift together flour, baking powder & cocoa into bowl. Add sugar, yogurt, eggs vanilla essence & oil & mix 2. Spoon into 20cm sq tin lined with non-stick paper & bake for 25-30 mins (@180degC) 3. Allow to cool, turn out & cut into squares ----- Same for banana (substitute for cocoa). Mash up 3 very ripe bananas & add. Justine
